| Orange Cranberry Bread |

Excellent for Thanksgiving and Christmas

| Instructions |
| 2 cups flour
1 cup sugar
1 Tbsp. baking powder
1/2 tea. salt
1 egg
1 cup orange juice
1/4 cup cooking oil
1 cup cranberries
2 tea. finely shredded orange peel
3/4 cup your choice of nuts (optional)
1. Grease the bottom and 1/2 inch up sides of an 8x4x2 inch loaf pan, set aside. In a large bowl stir together flour, sugar, baking powder, and salt.
2.In a medium bowl combine the egg, mild, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened. Add orange peel, nuts, and cranberries.
3. Bake in a 350 degree oven 50 to 55 minutes or until a toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack.
I like to put some grated orange peel on the top of the bread when it first comes out of the oven. It makes it look yummier! I also double the recipe and it makes three nice size loaves.
