| Known as the "green muse" or "green fairy", the notoriously hallucinogenic absente is back onthe shelf after an 80 year hiatus (Pernod is a fine substitue if you can't find Absente). Naturally, anything surrounded in scandal and taboo is the perfect candidate for a gelatin shooter. Proceed with caution- at 110 proof, any more than one or two of these and the green fog may just rematerialize.
12 OUNCES WATER
2 HALF-OUNCE ENVELOPES OF UNFLAVORED GELATIN
3 TABLESPOONS OF SUPERFINE SUGAR
4 OZ ABSENTE OR PERNOD
A FEW DASHES OF ORANGE BITTERS
*garnish* 20 ORANGE PEEL TWISTS
In a small saucepan, bring the water to a boil.
Pour the boiling water into a medium heatproof bowl and sprinkle the unflavored gelatin and sugar into the hot water, stirring until the gelatin and sugar are dissolved. Let cool.
Add the Absente and orange bitters to the cooled mixture, stirring until well combined.
Pour mixture into 20 2-oz paper or plastic cups and refrigerate for 15 mins, or until slightly set.
If garnishing, use a chopstick to push the orange peel into each shooter. Chill until firm, 4-6 hours. |
